Wheat is also used for other foods, f. ex., “Assida” and “Bessissa,” breakfast gruels high in calories but low in essential vitamins.
| A ground mixture of wheat and rye, spiced with cumin and coriander, mixed with dates, figs, sugar, and olive oil can be served at breakfast or as a snack. It’s often taken along by travelers on long journeys to far lands. Among those are the “haj,” men who undertake the pilgrimage to Mecca (in former times the “haj” rode to Mecca on dromedary back) who favor this dish because of its high caloric content and its ability to stay edible for long periods of time.
