Brique is a fine flaky pastry dough, folded into triangles (sometimes into rolls). The dough is often folded double to prevent ingredients from leaking out during cooking/frying. In addition to being used for pastry, briques can also be stuffed with potatoes, vegetables, chicken, fish, meat, eggs, basla, etc.
