In the 13th Century, three chickpea dishes were especially popular and beloved by the population. Ibn Razin recorded them for posterity: grilled chickpeas, chickpeas as a base for soup, and couscous with chickpeas.

is soup with chickpeas, cumin, lemon, harissa (hot pepper paste), olive oil, one egg, and stale bread cut into cubes. Said to be easily digestible.
