Ras mosli

is a skinned sheep’s head, cut in two and seasoned with salt, dried bell pepper, and cumin. It is cooked slowly at the local baker’s and has a mouth-melting texture.

Famous Ras Mosli vendors :

  • Keskène is the oldest and best known of the itinerant Mosli vendors. It can be found every afternoon at Bab tounes.
  • Amor Khesib’s Ras Mosli drips succulently in a hot rotisserie.
